Slate and marble cheese boards

They photograph beautifully and they are worse at the job. Slate blunts any knife dragged across it, marble is cold enough to keep cheese from reaching the temperature at which it tastes of anything, and both are heavy enough to be genuinely awkward to pass. Wood is warm, light and kind to a cheese knife, which is why every serious cheese shop uses it.

A serving board is not a cutting board

The two get sold interchangeably and they are built for different jobs. A cutting board is thick, heavy and unfinished-feeling because it has to resist a knife and stay put. A serving board is thinner, often larger, frequently has handles, and is finished to look good under food because it goes on a table in front of people.

The practical consequence: do not buy a thick end-grain block as a charcuterie board. It is too heavy to pass around, its mass is wasted, and it costs three times what the job needs. Conversely, do not chop on a thin serving board — it will cup. If someone needs both, they need two boards, and that is a genuinely good pair of gifts.

Most people buy the 10-14 inch board and then discover it holds a cheese, a knife and about nine crackers. If you are buying for someone who entertains, 16 to 20 inches is the size that actually works, and the 40-inch walnut board on this page is a different proposition entirely — it is the table decoration and the food service at once.

What a set actually needs

The knives that come with sets are mostly decorative, and that is fine — cheese knives do not need to be good, they need to be the right shape. Three shapes cover almost everything: a fork-tipped knife for hard cheese, a narrow blade for soft, and a flat spreader for anything that will not slice.

What sets usually miss and matters more: small bowls. Olives, cornichons and anything in brine will bleed across a board and turn the crackers soft, and a sectioned board or a couple of small dishes solves it. Finish, and the food-safe question

Any board sold for food service should be finished with a food-safe oil, wax or a fully-cured food-safe resin. Where a listing does not say, ask before serving on it — a decorative finish is not the same thing, and a board that was made as a wall piece and re-listed for cheese is a real category on marketplaces.

The Mexican board on this page carries a resin finish, which is an unusual choice worth understanding: cured resin is inert and wipes clean easily, but it does not breathe like an oiled surface and it cannot be re-sanded and re-oiled the way a plain wooden board can. Good for a serving piece, wrong for a board you will cut on.

Care

Wipe rather than soak, dry upright, oil it a few times a year. A serving board that never meets a knife has an easy life, and the main risk is that it gets treated as decorative and put through a dishwasher because nothing was ever cut on it. Wooden cutting board care applies to serving boards without modification.

What size charcuterie board do I need?
16 to 20 inches for four to six people is the size that actually works. Under 14 inches holds a cheese and not much else. Over 30 inches is a centerpiece rather than a serving board.
Are bamboo charcuterie boards any good?
Yes, for serving. Bamboo is hard, cheap and sustainable, and its hardness only matters when you cut on it. As a board food sits on rather than gets cut on, it is a sensible choice.
Can I use a charcuterie board as a cutting board?
Occasionally, gently, if it is thick enough. A thin serving board used daily as a chopping board will cup and scar. If someone needs both, buy both.
Do I need the knives that come with a set?
Not really, but they are the right shapes and they mean the recipient does not have to think about it. Small bowls for anything in brine matter more.
