Wooden bowls and dough bowls

Turning is a different craft entirely

Everything else in this section is additive: a maker cuts strips and glues them into a board. A bowl is the opposite — a solid block spins on a lathe and the maker removes everything that is not the bowl. There is no undo. Cut too deep and the piece is firewood, which is why turned bowls carry a failure rate and a price that reflects it.

It also means the bowl follows the wood rather than the other way round. A turner works with what the grain does, and the shape of the finished piece is partly the maker's decision and partly the log's. That is why two bowls from the same workshop are never the same, and why the photograph on a bowl listing is representative rather than exact.

Burl, and why it costs what it does

A burl is a growth on a tree — a knotty, deformed mass caused by stress or infection, in which the grain has grown in every direction at once instead of running straight. Cut and polished, that chaos becomes a swirling figure that cannot be produced any other way, and it is the single most prized material in wood turning.

It is also difficult and wasteful to work, because grain running in all directions tears out under a tool that would cut clean straight grain. A burl bowl is genuinely one of a kind in a way that is not marketing language — the object is a record of a specific defect in a specific tree. If you are buying for someone who appreciates material over design, this is the category.

Dough bowls: what they are for now

Historically a dough bowl was a working object — a long, shallow, hand-carved trough for mixing and proving bread, hollowed from a single piece so there were no joints for dough to catch in. Almost nobody uses them for that today, and the honest position is that they are now decorative objects with a functional history.

That does not make them a bad buy. A large dough bowl is one of the most effective single objects you can put on a dining table or a kitchen island: it fills space, it holds fruit or bread or nothing at all, and it looks deliberate. Size, and where to put it

Care

Wipe it, do not soak it, and oil it two or three times a year — the same routine as a board, with the added point that a bowl's end grain is exposed around its rim and drinks oil faster than a flat surface does. A bowl that has gone chalky-looking around the lip is telling you it is thirsty.

Keep it out of direct sun if you can. Bowls are usually a single piece of wood, which means seasonal movement is unrestrained, and a bowl that dries hard on one side and not the other is the one that cracks. Away from a radiator and off a south-facing windowsill is enough.
